The meat used to make Ca’ del Sette seasoned pancetta comes from selected farms located in the Veneto region of Italy. The flavor is firm, unsalted and slightly spicy. Pancetta stagionata is an unfailing cured meat to respect traditional tastes on a cutting board for an appetizer, but it is at its best when sliced by hand and used as an ingredient in cooking after sautéing to make it deliciously crispy.
