Sparkling wine ‘sur lie’ is a type of sparkling wine that is produced through a method of fermentation in the bottle, in which the wine remains in contact with the yeasts for an extended period after primary fermentation.
The result of a ‘sur lie’ wine is a richer and more structured taste, with more intense aromatic notes, sometimes of toasted bread, brioche or pastry, resulting from the contact with yeasts. This type of sparkling wine is appreciated for its elegance and its ability to evolve over time; perfect for celebrating life’s most special moments.

Pairings: It is perfect as an aperitif, but also goes well with refined hors d’oeuvres such as tuna tartare, sushi or crostini with foie gras; white meat dishes such as chicken or duck, especially if prepared with delicate sauces; grilled fish or shellfish dishes such as lobster, crab, king prawns and smoked salmon or seafood: molluscs such as clams, mussels or oysters. Also excellent with goat’s cheese, brie, gorgonzola or semi-hard mature cheeses such as parmesan.
